Tomato Rice

Tomato rice offers a range of health benefits owing to its key ingredient, tomatoes. Tomatoes are rich in lycopene, a powerful antioxidant that has been associated with various health benefits, including reducing the risk of chronic diseases and promoting heart health. Additionally, tomatoes contain vitamins C and A, which support the immune system and contribute to healthy skin and vision. The inclusion of brown rice, a whole grain, in tomato rice provides complex carbohydrates, fiber, and essential nutrients, promoting sustained energy release and aiding in digestion. The dish often incorporates various spices, such as turmeric and cumin, which not only enhance flavor but also offer anti-inflammatory properties. Ingredients:

  • 1 cup Basmati rice
  • 2 cups water (for soaking rice)
  • 2 tbsp cooking oil
  • 2-3 pcs cardamon
  • 1-inch cinnamon
  • 6-7 pcs cloves
  • 1 pc bay leaf
  • 1 tbsp cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 green chili, finely chopped
  • 1 tbsp ginger-garlic paste
  • ½  tbsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp garam masala
  • 1 tbsp Salt
  • Fresh coriander leaves for garnish

Instructions:

Rinse and Soak Rice:

  • Rinse 1 cup of Basmati rice in cold water until the water runs clear.
  • Soak the rice in 2 cups of water for about 15-20 minutes.

Preheat the Electric Rice Cooker:

  • Switch on the rice cooker and let it heat up.

Saute Aromatics:

  • In the preheated rice cooker, add 2 tablespoons of cooking oil.
  • Add mustard seeds and cumin seeds. Allow them to splutter.
  • Add chopped onions and sauté until they become translucent.

Add Tomatoes and Spices:

  • Add chopped tomatoes, green chili, and ginger-garlic paste. Sauté until tomatoes are soft.
  • Add turmeric powder, red chili powder, garam masala, and salt. Mix well.

Drain and Add Rice:

  • Drain the soaked rice and add it to the rice cooker. Stir to coat the rice with the tomato-spice mixture.

Cook:

  • Add 2 cups of water to the rice cooker. Stir once more.
  • Close the lid and let the rice cooker do its job. It will automatically switch to "warm" when the rice is done.

Fluff and Garnish:

  • Once the rice cooker indicates that it's done, fluff the rice with a fork.
  • Garnish with fresh coriander leaves.

Serve:

  • Serve the delicious tomato rice hot with yogurt, raita, or your favorite side dish.
