Cheesy Breakfast egg rolls

The eggs provide a good source of high-quality protein to keep you feeling full and energized. The addition of vegetables like bell peppers and onions contributes fiber, vitamins, and antioxidants.   • 4 large eggs
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons diced bell pepper
  • 2 tablespoons diced onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 egg roll wrappers
  • Cooking spray


Prepare Filling:

  • Whisk eggs, salt, and black pepper in a bowl.
  • Cook whisked eggs in a skillet over medium heat, scrambling gently until almost set.
  • Remove from heat, stir in cheddar cheese, bell pepper, and onion.

Assemble Egg Rolls:

  • Place 1 egg roll wrapper in a diamond shape.
  • Spoon 1/4 of the egg mixture onto the lower third of the wrapper.
  • Fold bottom corner over filling, fold in sides, and roll into a log shape.
  • Repeat with remaining wrappers and filling to make 4 egg rolls.

Air Fry Oven:

  • Spray air fryer basket with cooking spray and arrange egg rolls in a single layer, seam-side down.
  • Air fry oven at 370°F for 8-10 minutes, flipping halfway, until golden brown and crispy.


  • Serve hot with desired dipping sauce like salsa or ranch dressing.
