Ingredients:

For the Dough:

  • 2 cups maida
  • 1 tbsp oil
  • 1 tbsp salt
  • 1 tbsp sugar
  • ½ tbsp herbs
  • 1 tbsp chilli flakes
  • 1 tbsp yeast

For the Stuffing:

  • 4 mutton seekh kebabs
  • ¾ cup cheese
  • 1 tbsp chilli flakes
  • 1 chopped onion
  • 1 tbsp herbs
  • 1 tbsp salt

Instructions:

Prepare the Dough:

  • In a mixing bowl, combine all-purpose flour, warm water, oil, and a pinch of salt. Knead the dough until it's smooth and elastic. Cover and let it rest for about 15-20 minutes.

Prepare the Filling:

  • In a pan, heat oil over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until the onions are translucent.
  • Add minced mutton and cook until browned. Season with garam masala, cumin powder, coriander powder, salt, and pepper. Cook until the mutton is fully cooked. Set aside.

Assemble the Rolls:

  • Divide the dough into small portions. Roll each portion into a thin disc.
  • Place a spoonful of the mutton filling in the center of each disc. Add a generous amount of grated cheese on top of the filling.
  • Fold the edges of the dough to cover the filling, forming a roll. Seal the edges to prevent the filling from leaking during cooking.

Air Fryer Cooking:

  • Preheat the air fryer to 180°C (360°F).
  • Lightly grease the air fryer basket with cooking spray or oil.
  • Place the stuffed mutton cheesy rolls in the air fryer basket, leaving some space between them.
  • Cook in the air fryer for 12-15 minutes or until the rolls are golden brown and crispy.

Serve:

  • Remove the stuffed mutton cheesy rolls from the air fryer and let them cool for a few minutes.
  • Serve the rolls with your favorite dipping sauce.
