Vegetable Spring Rolls offer a flavorful experience packed with health benefits. They contain colorful vegetables rich in vitamins and antioxidants, while sesame oil adds savory flavor and heart-healthy fats. For the Filling:
- 1 cup chopped onions
- 1 cup chopped capsium
- ½ cup cheese
- ½ cup sweet corn
- 1 tbsp soy sauce
- 1 tbsp vinegar
- ½ tbsp Salt
- 2 tbsp flour
- ½ cup water
Other Ingredients:
- Spring roll wrappers (defrosted, if frozen)
- Cornstarch mixed with water (for sealing the wrappers)
- Cooking spray or oil for air fryer
Instructions:
Prepare the Filling:
- In a large pan or wok, heat vegetable oil over medium-high heat.
- Add chopped onions, chopped capsium. Stir-fry for 3-5 minutes until the vegetables are slightly tender but still crisp.
- Season with soy sauce and salt.
Assemble the Spring Rolls:
- Place a spring roll wrapper on a clean surface, with one corner facing you (diamond shape).
- Spoon a portion of the vegetable filling onto the wrapper.
- Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal the edge with a paste made of cornstarch mixed with water.
Preheat the Air Fryer:
- Preheat your air fryer to 180°C (360°F).
Air Fry the Spring Rolls:
- Lightly grease the air fryer basket with cooking spray or oil.
- Place the spring rolls in the basket, leaving some space between each roll.
- Air fry for 10-12 minutes, turning halfway through, or until the spring rolls are golden and crispy.
Serve:
- Remove the spring rolls from the air fryer and let them cool for a few minutes.
- Serve the spring rolls with your favorite dipping sauce, such as sweet chili sauce or soy sauce.
