Tomato Rice

Tomato rice cooked in a rice cooker offers a blend of health benefits. Tomatoes provide antioxidants like lycopene, promoting heart health and reducing cancer risk. Combined with fiber-rich brown rice, it supports digestion and regulates blood sugar levels. This convenient dish is packed with vitamins and minerals, offering a nutritious addition to a balanced diet.

 Ingredients:

  • 1 cup long-grain white rice
  • 2 cups water or vegetable broth
  • 1 tablespoon cooking oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium-sized tomatoes, diced
  • 1 teaspoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions:

Rinse the Rice:

  • Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky.

Sauté the Aromatics:

  • Heat the cooking oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant, about 2-3 minutes.

Add the Tomatoes and Spices:

  • Add the diced tomatoes to the skillet, along with the tomato paste (if using), ground cumin, and ground coriander. Stir well to combine and cook for another 2-3 minutes until the tomatoes soften and release their juices.

Combine with Rice:

  • Transfer the sautéed tomato mixture to the rice cooker insert.
  • Add the rinsed rice to the rice cooker insert and pour in the water or vegetable broth. Stir gently to combine all the ingredients.

Cook in Rice Cooker:

  • Close the rice cooker lid and select the "Cook" or "White Rice" setting, depending on your rice cooker model. Let the rice cooker do its job until it switches to "Keep Warm" mode, indicating that the rice is cooked.

Fluff and Serve:

  • Once the rice is cooked, open the rice cooker lid and fluff the rice with a fork to separate the grains.
  • Taste and adjust seasoning with salt and pepper if needed.
  • Garnish with fresh cilantro or parsley before serving, if desired.
