Vegetable rice cooked in a rice cooker offers a balanced blend of complex carbohydrates, fiber, vitamins, and minerals. Ingredients:
- 1 cup long-grain white rice
- 1 3/4 cups water or vegetable broth
- 1 tablespoon cooking oil
- 1 onion
- 2 cloves garlic
- 1 carrot
- 1 bell pepper
- 1 cup mixed vegetables
- 1 teaspoon curry powder
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions:
Prepare the Rice:
- Rinse the rice under cold water until the water runs clear. Drain well.
Sauté Aromatics and Vegetables:
- Heat the cooking oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant, about 2-3 minutes.
- Add the diced carrot and bell pepper to the skillet, and cook for another 3-4 minutes until the vegetables begin to soften.
Combine with Rice:
- Transfer the sautéed vegetables to the rice cooker insert.
- Add the rinsed rice, mixed vegetables, and curry powder (if using) to the rice cooker insert. Pour in the water or vegetable broth. Stir gently to combine all the ingredients.
Cook in Rice Cooker:
- Close the rice cooker lid and select the "Cook" or "White Rice" setting, depending on your rice cooker model. Let the rice cooker do its job until it switches to "Keep Warm" mode, indicating that the rice is cooked.
Fluff and Serve:
- Once the rice is cooked, open the rice cooker lid and fluff the rice with a fork to separate the grains.
- Taste and adjust seasoning with salt and pepper if needed.
- Garnish with fresh cilantro or parsley before serving, if desired.
