Veggie samosas are a popular Indian snack that offers a blend of flavors and potential health benefits. Packed with vegetables like potatoes, peas, carrots, and spinach, they provide essential nutrients such as vitamins, minerals, and fiber. Potatoes offer potassium and vitamins C and B, while peas contribute protein and fiber. Carrots provide beta-carotene for eye health, and spinach offers iron and folate. Baking the samosas instead of frying reduces overall fat content, making them a healthier option. Spices like turmeric, cumin, and coriander may have anti-inflammatory and digestive benefits.

 Ingredients:

For the Filling:

  • 2 large potatoes, boiled, peeled, and mashed
  • 1/2 cup green peas, boiled
  • 1 small carrot, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 green chili, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1 tablespoon oil

For the Pastry:

  • 10-12 samosa pastry sheets (store-bought or homemade)
  • 2 tablespoons all-purpose flour mixed with water (as glue for sealing)

Instructions:

Prepare the Filling:

  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  • Add chopped onions, minced garlic, grated ginger, and green chili. Sauté until onions turn translucent.
  • Add grated carrot and boiled peas. Cook for 2-3 minutes.
  • Add mashed potatoes, coriander powder, turmeric powder, garam masala, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and let the filling cool.

Assemble the Samosas:

  • Take one samosa pastry sheet and fold it into a cone shape, sealing the edges with the flour-water mixture.
  • Fill the cone with 1-2 tablespoons of the prepared filling. Seal the open edge of the samosa with the flour-water mixture to form a triangle shape. Repeat with the remaining pastry sheets and filling.

Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Air Fry the Samosas:

  • Lightly grease the air fryer basket or tray with oil.
  • Place the assembled samosas in the air fryer basket, leaving some space between them.
  • Air fry at 375°F (190°C) for 12-15 minutes or until the samosas are golden brown and crispy, flipping halfway through for even cooking.

Serve:

  • Once done, remove the samosas from the air fryer and let them cool slightly.
  • Serve hot with your favorite chutney or sauce.
