Run the magnet test: if a magnet grips the base, it works on induction. Triply stainless steel is the everyday workhorse — steel outside, aluminium core for even heat, no coatings. Cast iron is naturally magnetic and unbeatable for tawas and kadais — just lift rather than slide it to protect the glass. Coated aluminium pans usually fail the magnet test unless they have a bonded steel base. Match the base diameter to your induction ring: 20–26 cm suits most Indian cooktops.
