Triply Stainless Steel Kadai — Buying and Using It

A triply stainless steel kadai bonds three layers into one body: a food-grade SS 304 cooking surface, an aluminium heat core and a magnetic steel outer. The aluminium spreads heat through the base and the walls, so gravies do not scorch in a ring above the burner — and there is no coating to chip, peel or replace.

Why steel rather than coated for a kadai

A kadai does the wettest, most acidic cooking in the kitchen — tomato, tamarind, kokum, long-simmered gravies. SS 304 is completely non-reactive, so none of that touches the flavour or pits the surface, from day one and with no seasoning routine. It also takes metal utensils, which coated pans cannot.

Getting food to release

Steel is not non-stick, and that is fine once you know the sequence: heat the dry pan, then add oil, then add food. Flick in a few drops of water — when they form a silvery ball that glides, the pan is ready. Full method in how to cook on stainless steel without sticking.

Care

  • Dishwasher-friendly, and metal utensils are fine.
  • White chalky patches are hard-water minerals — simmer water with lemon or vinegar.
  • A rainbow tint is harmless oxidation; a vinegar wipe removes it.
  • Burnt-on food lifts after simmering water in the pan for ten minutes.

Common questions

Does it work on induction? Yes — the magnetic steel outer works on induction, gas, electric, ceramic and halogen.
