Steel, cast iron or ceramic — which kadai should you buy?
A stainless steel kadai is the all-rounder: no coating, safe for tomato and tamarind gravies, dishwasher-safe, and — in triply construction — heats evenly with an aluminium core. A cast iron kadai holds heat best for deep-frying and becomes naturally non-stick with seasoning, but is heavier and needs drying and oiling. A ceramic kadai is the lightest non-stick option for low-oil cooking. Sizes run from 18 cm for one or two people to 28 cm for large families; all SOLARA kadais work on gas and induction.
Kadai — frequently asked questions
Which kadai is best for daily cooking?
For most Indian kitchens, a triply stainless steel kadai: it handles sabzi, dal tadka, gravies and frying, has no coating to wear out, and works with acidic ingredients. Add a cast iron kadai if you deep-fry often.
Is a stainless steel kadai good for health?
Yes. Food-grade stainless steel is non-reactive and has no synthetic coating, so nothing leaches into food. Triply steel kadais sandwich aluminium between steel layers, so the aluminium never touches food.
Why does food stick to a steel kadai?
Usually because the kadai is not hot enough when oil and food go in. Heat the empty kadai on medium for a minute, add oil, then add food once the oil shimmers. Food releases on its own once a crust forms.
What size kadai should I buy?
18–20 cm suits one or two people, 22–24 cm a family of three to five, and 26–28 cm large families or batch cooking. If you buy one kadai only, 24 cm is the most versatile.
Steel kadai or cast iron kadai — which is better?
Steel for versatility and easy care, including tangy gravies; cast iron for deep-frying and heat retention. Many kitchens keep one of each.
Do these kadais work on induction?
Yes — every SOLARA triply, cast iron and ceramic kadai has an induction-compatible base and also works on gas.
